Food from the grill doesn't always have to be big hunks of meat, sometimes a grilled piece of fish is what we want and a wine like the Uppercut Sauvignon Blanc is the ideal complement.

From the Winemaker

Bright and lively, our 2010 Uppercut Sauvignon Blanc opens with aromas of white peach, melon, orange blossom and a hint of lemongrass. In the mouth, stone fruit and honeydew give roundness to the entry, joined by a crisp minerality and refreshing Key lime. Sur lie aging adds a nice weight and fullness on the palate, which is followed by a zesty, fruit-focused finish. With a bracing acidity and supple floral-fruitiness, this wine makes an excellent companion to seafood; pair it with oysters on the half shell or a variety of fleshy white fish such as mahi-mahi or swordfish.

Vineyard

We sourced the fruit for this wine from select vineyards in Mendocino and Lake Counties. Both of these regions have large diurnal temperature swings, which allow for slow maturation of complex flavors. Under the heat of the sun, the sugars develop, allowing the melon and stone-fruit characters of this varietal to come forward. As the cool nighttime conditions set in, the ripening process is slowed, establishing well-balanced acids. The result is a stunning combination of ripe fruits with bright citrus and mineral notes.

Winemaking

The rounder, riper profile of our Sauvignon Blanc began with extended hangtime on the vine. Throughout the fall, we monitored the grapes carefully, picking the fruit at the peak of phenological ripeness. To preserve the fresh aromas and high fruit tones, we placed the grapes in stainless steel for a cool fermentation. The lower temperatures allowed a slow extraction of flavors, retaining the wine’sbright character and subtle nuances. To enhance mouthfeel, a small amount was aged sur lie.

Vintage

A cool vintage, the 2010 growing season was favorable for white varietals. The moderate temperatures, combined with careful vineyard practices, ensured that the fruit ripened evenly and the flavors developed to their maximum potential.Extended hangtime allowed the fruit to develop intense, complex flavors. The result is a well-balanced Sauvignon Blanc exhibiting supple fruit with bright citrus and mineral notes
